Ingredients:
320g uncooked pasta (I used tricolore pasta)
400g fresh salmon fillet (cut into bite size chunks)
2 large leeks, sliced
500ml pasta sauce
15 grape or plum tomatoes
100g grated cheese (Parmesan or mature cheddar works well)
2 tsps unsalted butter
Method:
• Preheat your oven to 180°C/350°F/Gas Mark 4
• Cook the pasta until al dente, drain it and leave to one side
• Fry the leeks in the butter over a medium heat until they have softened
• Add the sauce, pasta, leeks, tomatoes and salmon chunks, and stir well but gently
• Transfer the mixture into an oven proof dish and sprinkle with the cheese
• Place in the oven and bake for approx. 20mins until the salmon is cooked through and the cheese has melted
Variations:
You could probably add in additional vegetables as well such as sweetcorn or broccoli
