This is a fun lunch, but can be made as healthy as you like by adding more and more vegetables. I remembered my little one having something similar to these at nursery, so I decided to try them at home when I was looking for a weekend alternative. Below is the basic recipe I use, but you can add all sorts. I use half a pack of pastry one weekend, and either make sweet rolls or freeze the other half another time.
Ingredients:
1/2 pack ready rolled puff pastry
Tomato paste
Grated cheese
2 slices of sliced ham, cut up
1/2 1 stick grated celery
A large pinch mixed herbs
1 beaten egg
Method:
• Preheat your oven to 190°C/375°F/ Gas Mark 5
• (After cutting the pasty roll in half…) Take the pastry out of the fridge 10 mins before use, or simply zap it in the microwave
• Unroll your pastry, leaving it on the baking paper (you can use this later if you wish to place on your baking tray.)
• Spread as much or little tomato paste as you like over your pastry. We use quite a lot, probably 1-2tbsp
• Sprinkle your grated cheese (again, as much or as little as you like,) over, followed by your grated celery
• Cover with pieces of ham and then sprinkle with herbs.
• Roll your pastry back up as tightly as possible, and then slice into 6 swirls.
• With a pastry brush, egg wash your rolls, and then bake in the oven for 12-15 mins until golden brown
Variations:
You can add spinach, sweetcorn, sausage, mini meatballs, (although they might be difficult to roll up!) slices of cherry tomato, the list goes on….
