WHAT I’M COOKING


It’s very easy to tell other people what recipes are tasty or easy to make, but I really do feed my kids these recipes, and we enjoy family meals together thanks to a lot of these recipes. So, here are the things I have made recently:

28th January 2018

Cheesy (Butternut Squash) Pasta – Trying to get my 2 eat veg is never easy, so this fuss free pasta is a great way to get a good amount of butternut squash into them. My little boy can’t eat this quick enough and normally asks for seconds! It takes about 20-25-mins to make max, and I love it too. This is a real family favourite!

Simple Chicken Curry – I have to say, I am not a spicy food fan, but this version of a tikka masala is so creamy and tasty, and packed full of tomato and onions (easy to pack in a lot more veg if you wish such as sweet potato chunks or cauliflower for example) that it is a win in my book. You can add as much spice as you like if you want to turn up the heat. This time, I made it with 6 boneless chicken thighs and it served my 2 kids for their tea. me and my husband for lunch the next day and me for lunch at work the day after that!

Apple and Pear Crumble – as the weather is turning colder now, I thought it would be nice to have a comfort food kind of dessert, so made this! It is so delicious, and suitable for everyone in the family, even my 10 month old!

Scotch Eggs – well, my little boy is now 9 months old and he is eating like a beast! Turns out he loves scotch eggs, and they are high in protein plus super convenient to take places if you’re on a day out!

No Sugar Biscuits – another gap in my updates due to a family tragedy. Hopefully, life will get back to normal now! I made these biscuits for my little princess as an experiment, and she loved them!  These are going to be a firm family staple now!

Chicken, Leek and Ham Pie – I know there’s been a gap in my updates on this page, but I have been busy having a baby and letting my husband cook!! Tonight though, I am cooking for my in-laws (who love this pie!) my husband’s grandfather and my husband. I really do love this pie, and it is so tasty on a winter’s evening! I also made some Savoury Flapjacks for my little princess. I had to make a double batch though so my husband could have some!!

Mini Scotch Pancakes – Our town and surrounding villages have had no gas for a few days thanks to a local building company damaging a pipe, so the day we got it back, we decided to make some tasty raisin pancakes!

Peanut Butter Oaty Slice – I decided that I have been giving the little one too many processed snacks out of convenience, so I prepared for this weekend by making a batch of these scrummy oaty bars. She loves them, and they’re quite filling too which is handy! The fact that they’re “no bake” is just even more of a blessing!

Creamy Sausage Pasta – I came home from work and within 30 mins (if not less) tea was ready. I used wholemeal spaghetti and instead of sausages, I used several strips of crispy smoked streaky bacon cut into small pieces. It was great a great switch because the bacon cooks much faster and is just as tasty. I’ve found if you cook everything separately, (pasta, sauce and meat,) stirring everything together before serving, you can keep the sauce in the fridge on a sealed container for a few days and simply cook the pasta and meat as needed. Then, tea can be ready in almost no time at all!

Beef and Vegetable Stew – This one didn’t quite go to plan! I cooked it, I ate it, but her ladyship was not as keen as me this time! She ate her jacket potato and dumpling, a little meat and some of the gravy at least. Last time I made it, she loved, it so I am not sure what changed! I guess that’s just the way of the toddler; fickle, fussy, contrary…..I could go on, but we’ve all been there I’m sure! (I hope!)
